  Is it possible to plug in middlewares in jester?

  How would an authentication/authorization workflow be implemented in Jester?

  It has nothing to do with web-server used, be that Jester or anything. Just make pages for that, that show forms, querying user information, and interact with DB (store/retrieve user data). Just as in PHP, Ruby, etc.

  You have to build you own MVC just now, I think. But the internal Route DSL helps lot.

  There isn't really any support for middlewares in Jester. This isn't something with which I am familiar with I'm afraid, but you can pretty much write any library and use it from Jester.
